Tropical Mango Salsa to Put You in the Summer Mindset

There’s nothing like the taste of fresh tropical fruit, refreshing drinks, and sea salt that sends me back to carefree beach days. In the pursuit of warmer weather, I made fish tacos and mango salsa. The perfect combination for a date night (or any night really).

Check out the recipe, below. But first, here’s how we celebrated our Valentine’s Day brunch at Cookshop in Chelsea. Thanks Infatuation for the Chronic Brunch recommendation!

After a very colorful brunch and a long (freezing) walk around the city, we stayed in and made delicious salmon tacos and mango salsa. I was inspired by this recipe, Seared Salmon Tacos with Honey-Lime Slaw and Sriracha Ranch by Peas and Crayons.

How many days until summer? We can still find ways to enjoy our time no matter what the weather is, right?
