There’s nothing like the taste of fresh tropical fruit, refreshing drinks, and sea salt that sends me back to carefree beach days. In the pursuit of warmer weather, I made fish tacos and mango salsa. The perfect combination for a date night (or any night really).

After a very colorful brunch and a long (freezing) walk around the city, we stayed in and made delicious salmon tacos and mango salsa. I was inspired by this recipe, Seared Salmon Tacos with Honey-Lime Slaw and Sriracha Ranch by Peas and Crayons.

Tropical Mango Salsa
Ingredients:
- 1-2 ripe mangoes peeled, pitted, diced
- 1 red bell pepper; diced
- 2 tablespoons red onion; minced
- squeezed lime juice
- fresh cilantro sprinkled on top
- salt and pepper to taste
Directions:
- Combine the mango, red bell pepper, and red onion in a large bowl. Add the lime juice, and toss together well. Season with salt, pepper, and fresh cilantro.
How many days until summer? We can still find ways to enjoy our time no matter what the weather is, right?
