Sassy Salmon, Sweet Potato and Salad

Salmon is full of those healthy fats and omega 3 fatty acids that are so good for your body and your brain.  This is a meal I like to eat a few times a month – preferably once a week. Its super delicious and easy to make! Take it from me.

The sassy sauce on the salmon offers bold flavors and a nice change. Not using a whole bunch of ingredients and spices allows the sauce on the salmon to really speak for itself.

Salad

Ingredients (for four people)

  • 2 pounds of salmon, cut into pieces
  • 4 large sweet potatoes
  • Sal’s Sassy Sauce
  • Salad – dark leafy greens, onions, tomato, carrots and peanuts
  • Dressing – olive oil, vinegar and dijon mustard

Dinner

The light dressing on the salad consists of olive oil and mustard, which complements each part nicely. It’s sweet, savory and spicy aspects offer a light, fresh feeling. Enjoy!
