As someone who goes out to eat a lot in NYC, I really needed to get back into the blogging groove and cook something delicious.
After going to BlogHer Food ’19 I connected with Eattiamo, an Italian food delivery service to cook authentic meals at home.
I was delighted to learn that they pick the freshest ingredients in Italy and they are based in Cinque Terre, a beautiful location beyond words.
Fast-forward to a week after the event, we received our Cinque Terre box with the best ingredients: staggiasca olives, extra virgin olive oil, trofiette pasta, and pesto cream sauce. Also, don’t forget dessert! This came with a sweet and savory stroscia cake with lemon marmalade. All of the ingredients were high-quality and delicious.
Italian Pesto Pasta
Eattiamo’s ingredients with Vivi’s twist
Ingredients:
- Trofiette pasta
- ROI extra virgin olive oil
- Pesto cream sauce – we used the one in the box and added more basil & olive oil
- Parmesan cheese (optional, but highly recommended)
- Pecorino cheese (optional, but highly recommended)
- Fresh basil (added to taste)
- A generous pinch of salt
We used the pesto in the box and added a bit more cheese and ingredients. You can watch the video to create your own pesto sauce here. I’ll try to cook my own pesto next time! Let me know if you beat me to it. ๐
Low-key directions:
- Cook pasta in a pot of boiling water until ready.
- Drain the pasta. In a large bowl, add the pesto sauce, olive oil, and salt.
- Extra: Grate parmesan and/or pecorino cheese to your liking. Serve with your loved ones.
