It’s been a little while since my last blog when I wrote about my undying love for Cali’flour Foods Cauliflower Pizza.
Many of our lives have drastically changed in the past few weeks due to COVID-19. Constant updates on the news are doing nothing for my mental health, so I thought I’d share a few of my favorite recipes and meal prep ideas, as they’ve provided a little bit of comfort and happiness during this difficult time of social distancing.
This past weekend, many of us around the world had a socially distant Easter and Passover. For me, Easter this year meant Zooming my immediate family and making a veggie version of this egg bake that I posted years ago. Drizzled on a little hot sauce and placed it on a bed of lettuce, and it came out delicious. If you’re interested in the quick & easy recipe, they’re on my @vivieimpara stories.
While we’re trying to limit our exposure in the grocery store during this time, I feel grateful that we have three meals already lined up and ready for us via GreenChef. No promotion here, but if you want healthy ingredients and recipes delivered to your door, this is the way to go.
We decided on a meal plan with a lot of protein and vegetables, and of course healthy fats.
