3 Quick & Easy Breakfast Recipes

I’ve got three (+1!) recipes for you this hot, sweltering Sunday and for the week ahead.

If you don’t want to leave your bed or comfy couch to go out to brunch it’s really ok. I’ve got you.

Stay in and make one of these recipes:

1. Protein Pancakes – there are many ways to make your pancakes with real ingredients, more protein, and less of the fake stuff.

This Nutty Protein Banana Pancakes recipe can be adapted to your taste buds by swapping out banana for blueberries, using whole wheat flour instead of oatmeal, and skipping the maple syrup sauce for extra health points.

2. Strawberries & Cream Oatmeal – this is so easy to make that it’s almost embarrassing that I’m posting a recipe on here.

All you need is oatmeal, sliced strawberries, cinnamon and a little cream or milk, if desired.

3. Sriracha Shakshuka – This spicy shakshuka recipe packs a flavorful punch, but I cannot take all of the credit. It is adapted from The Veggie-Lover’s Sriracha Cookbook, that you. must. buy. now.

I used eggs instead of the suggested tofu in the cookbook (the recipes are very vegan) to make this more like a traditional shakshuka recipe.

I added the following key ingredients: 4 eggs, 2 green peppers, 1 can of crushed red tomatoes, splash of sriracha sauce, 1/2 red onion, garlic, parsley, paprika, pepper, etc… make your own variation and let me know how it goes. This was delish.

I’ll leave you with one more: 

Healthy Huevos Rancheros – lately, this well-known Mexican dish has been a favorite brunching option for me. I decided that I could make this with a few of my own healthy ingredients and skip on the extra grease and fat.

What you will need to make this: soft tortillas, 2 eggs, sliced bell peppers (your choice), 1 jalapeño, handful of cherry tomatoes, sliced red onion (to your liking), 1/4 cup of black beans, handful of lettuce, and your choice to add cheese.

    1. Thanks, I’m glad you liked it! I made it this morning instead of going out and it was so easy to make. Cook eggs, black beans, and veggies in a pan, scoop onto a small soft tortilla, and sprinkle on some of your favorite toppings.
